Yoghurt or "dahi"
Cooking with Yogurt: Yoghurt is extremely versatile ingredient, and is used to make a
refreshing yoghurt smoothie called lassi, which is either drunk sweet or salty. Yoghurt is
also found in Gujarati kadhi, or is used as a thickener for meat gravies, or in salads
called raitas or chutneys. Yoghurt is an essential ingredient in tandoori marinades, and
along with other ingredients ensures that the grilled meat remains juicy and succulent.
In Bengal, yoghurt is hung overnight and mixed with sugar to make the delicious
dessert, shrikhand, which is eaten with crisp puris. Most often than not, however,
yoghurt is eaten as a digestive at the end of a spicy meal - its cooling properties and
probiotics aid in the digestion of fiery spices and fried foods.
In India, yoghurt is usually made fresh everyday, using the starter from the previous
day's batch which is mixed with warmed, full-cream milk. It is then covered with a cloth
or clingfilm and placed in a warm place until it is set. Sign up for the Cooking with

Yoghurt or "dahi" is a lactic fermentation of
milk. Yoghurt is significant to Hindu culture,
as it is a byproduct of the sacred cow, the other
products being milk, cream, butter, ghee and
cheese or paneer. Yoghurt is known for its
smooth, refreshing and pleasant taste, and is
one of the most therapeutic and healthy foods
that one can eat.
Yoghurt for your Health: Yoghurt is a very nourishing food. It is a valuable source of
protein, essential vitamins and minerals. It is also a rich source of calcium and
riboflavin. The proteins in yoghurt are more readily digested than the protein in milk,
making it an ideal diet for those with sensitive digestive systems. The probiotics in
yoghurt inhibit the growth of hostile or illness-causing bacteria inside the intestinal tract
and promote beneficial bacteria needed for digestion. It is also used in facepacks to
make the skin soft and glowing and as a hair conditioner. Yoghurt is also said to cure
insomnia, prevent premature aging and alleviate skin disorders.
