Maggie's Watermelon Salad
(serves 4-6 people)
This is a delicious summer salad created by our wonderful, crazy, fun-loving Parsi
friend Maggie, who lives in Sydney, Australia. She is a wonderfully inventive cook, and
came up with this recipe that will keep you cool through the hot summer months! It is a
wonderful accompaniment for Indian food!
You will need:
1 medium-sized seedless watermelon
1 red onion, sliced fine
4 ounces feta cheese, crumbled
1 bunch flat-leaf parsley
1 cup balsamic vinaigrette
freshly milled pepper
coarse sea salt to taste
Method: Cut the watermelon into wedges or bite-sized pieces and chill in the
refrigerator. Slice the red onion fine, and take the leaves off the flat-leaf parsley.
Combine the prepared ingredients in a large bowl or platter, sprinkle with feta cheese,
pepper and salt, and finally drizzle with the balsamic vinaigrette. The cold sweetness of
the watermelon combined with the other ingredients will blow your mind!
