Chapati - a whole wheat-based unleavened bread or tortilla
Aloo Mattar Gobi - potato, peas and cauliflower are sauteed in spices and steamed in
their own juices
Papad and pickle - traditional condiments - learn how to grill or fry a papad!

Welcome drink: Lime Juice Spritzer - sweetened lime juice with a spritz of club soda
"Butta" - Indian-style corn-on-the cob, smeared with lime juice, cayenne and salt
Baingan Raita - slow-roasted eggplant salad, with yoghurt, cilantro and spices
Paneer Tikkas - Indian cottage cheese squares, tandoori-style!
Mirch-Aloo Bhaji - Green peppers stuffed with potato vegetable
Nan bread - Indian flatbread, heated on the grill

Indian Street Food ($45 per person)
Indian street food, known to natives as “chaat” is mouthwatering and addictive, but your
travel guide warned you to keep away! Learn how to make these delicious morsels
without experiencing the dreaded “Delhi-belly”!
Welcome drink: Fresh lime soda - sweetened fresh lime juice with a spritz of club soda
Aloo Tikkis and Chhole - potato patties fried crisp and served with the garbanzo bean
curry
Sev Puri - crispy morsels of fried dough topped with potato, onion and sweet and hot
chutneys
Pav Bhaji - spicy vegetable puree served with bread (pav) and butter

South Indian Feast ($45 per person)
Learn how to make this delicious meal, resplendent with the essential curry leaf!
Welcome drink:
Upma – Semolina or cream-of-wheat puree flavored with mustard seeds and curry
leaves
Aloo bhaji – boiled potatoes, sautéed in spices and sliced onions
Sambhar – spiced lentil curry, cooked with vegetables and finished with tamarind pulp
“White” coconut chutney – delicious coconut chutney that accompanies this meal

Cooking with Yoghurt (vegetarian) ($45 per person)
Yoghurt or “dahi” is a staple of Indian food. Rich in calcium, proteins and active cultures
that help with digestion, plain yoghurt is often served to temper the effects of fiery
spices.  
Welcome drink: Sweet Lassi – sweet yoghurt smoothie
Kadhi – a yoghurt-based curry with fried chickpea dumplings served with
Steamed Rice
Dum Aloo
– Baby potatoes cooked in a spicy yoghurt sauce
Raita – a fresh and tasty yoghurt salad

Cooking with Coconut (vegetarian) ($45 per person)
Coconut trees grow in abundance all along India’s coast line, and the coconut has
been incorporated into the cuisine of Indian states that are blessed with this versatile
plant.  
Welcome drink: Nimbu pani – fresh lime juice sweetened with cane sugar
Green coconut chutney – a great spread, relish or appetizer!
Vegetable caldine – a mild yellow coconut curry, made with mixed vegetables
Green Beans Foogath – green beans stir-fried with desiccated coconut
