An Indian Twist on Thanksgiving!

What to do with those Thanksgiving leftovers?!?  There always seems to be tons of
leftover mashed potatoes, as well as the never-ending turkey! These great new recipes,
with their use of vinegar, worcestershire sauce and breadcrumbs, borrow their
traditions from the Anglo-Indian style of cooking!

Curried Tuna Fish Cakes
1 and 1/2 cups mashed potatoes (or two large potatoes, boiled and mashed)
1 (12-ounce) can chunk lite tuna (packed in water)
5 green onions (chopped)
2 tablespoons cilantro or flat-leaf parsley (chopped)
1 chopped, de-seeded serrano
or jalapeno pepper (optional)
Juice of 1 lemon
1 teaspoon curry powder
garlic salt and freshly milled pepper to taste
1 egg, beaten
bread crumbs
1/2 cup of oil for frying
Method:  Drain the tuna and put into a bowl, breaking it up with a fork. Mix in the green
onions, cilantro, chile peppers, curry powder, garlic salt, pepper and lemon juice.  Add
the mashed potatoes gradually, until the mixture comes together and is firm enough to
form into patties.  Dip into the beaten egg, roll in the bread crumbs, and shallow fry
gently in a pan over moderate heat.  Tastes great with ketchup!

Turkey Chili Fry
3 cups shredded, cooked turkey meat
2 large onions, sliced fine
4 cloves garlic, peeled and chopped
1-inch piece of ginger, peeled and chopped
1 bunch of cilantro leaves, chopped
1 jalapeno pepper - deseeded and chopped
1 teaspoon garam masala
1 tablespoon each of vinegar and Worcestershire sauce
Method:  Fry the onions until they are soft, then add the garlic, ginger, jalapeno peppers
and chopped cilantro, followed by the garam masala, salt and freshly milled pepper.  
Add the turkey meat, sprinkle on the vinegar and worcestershire sauces, and toss
gently until it is all heated through. Eat with steamed rice or crusty bread.
