A Rich Historical Tradition
Indian cooking has a rich history and tradition that reflects the intersection of various
cultures, traditions and cooking techniques. Early Yogic vegetarian diets were based on
Ayurveda, an ancient system of knowledge designed to cleanse the body of toxins
through the use of natural herbs and spices. The cuisine of India has absorbed the rich
and varied traditions of its many invaders; from the creamy, nut-based kormas of the
Persian pashas, to the European culinary traditions of the British, Portuguese and
French colonial powers, which incorporate vinegar, roasts, and pastries to produce the
ultimate fusion cuisine experience! Each Indian state boasts of its own unique cuisine
that reflects its individual history, culture and geography.

In modern times, Indian cooking is being rediscovered as containing all the essential
ingredients required to maintain a balanced diet and healthy lifestyle such as whole
grains, legumes, nuts, leafy vegetables and fruit. Herbs and spices widely used in
Indian food such as black pepper (kalimiri), ginger (adrak) and cilantro (kotmir) have
proven antioxidant properties, and help boost immunity, while the popular Indian spice
turmeric (huldi) has been proven to prevent the onset of Alzheimer’s disease.

Indian cooking does not have to be laborious or painstaking! Time-saving ingredients
such as canned coconut milk, tomato paste and ingredients found in your local grocery
