Coconut Rice (serves 4)
Here's a use for that can of coconut milk!
You will need:
2 cups of basmati rice
1 large onion, finely sliced
1/2 teaspoon whole black peppercorns (or freshly milled pepper to taste)
1 tomato, chopped
1 can unsweetened coconut milk
1 cup water
2 teaspoons turmeric
3 tablespoons oil or ghee
salt to taste
Method: Wash the rice in plenty of water until the water runs clear. Cover in some
more water and soak for 10 minutes. Heat the ghee and brown the onion. Drain and
set aside. In the same ghee, add the peppercorns, rice and turmeric, and fry over a low
heat until the rice is toasted. Add the tomatoes, coconut milk, salt and enough water so
that it stands 1" above the rice. Bring this to a boil, reduce the heat and cover with a
tight-fitting lid. Cook for 15 minutes until the rice is tender. Garnish with the fried
onions.
