Easy Aloo Palak (Spinach-Potato) Vegetable
This is an easy, delicious recipe using ingredients you're sure to have at home.
You will need:
1 bag of baby spinach
1 large Yukon gold potato (peeled and cubed)
2 cloves of garlic, sliced
1 medium onion, sliced
1-2 jalapeno peppers (slit)
2 pinches red chili flakes
1/2 teaspoon curry powder (optional)
3 tablespoons olive oil
salt to taste
Method: Heat the olive oil in a pan, and toss the cubed potatoes in the oil, frying gently
until they get a crust. Take the potatoes out of the pan and set aside. In the same oil,
saute the garlic, onion and jalapeno peppers until soft. Sprinkle the chili flakes, salt
and curry powder (if using) over the mixture. Then turn the heat up high and add the
spinach, stirring until it wilts. Add the potatoes back into the pan and stir with the
spinach. Cover the pan with a tight-fitting lid, lower the heat and steam for a few
minutes until the potatoes are cooked through.
